Beef stock

  • Get the ingredients prepared and ready.
  • Put the meat and vegetables in a shallow roasting pan and drizzle with oil and toss a bit to coat.

Chicken stock


  • Get chicken ingredients prepared and ready.
  • Place chicken and other vegetable ingredients in the Cuisinart® Slow Cooker ceramic pot and add water.
  • Close the lid and turn the power button ON and set the timer to 3 hours HIGH.
  • When the cooker completes the three hours HIGH cooking, it will shift to Warm. At this time, adjust the time for 4 hours SIMMER. It will automatically shift to WARM when cooking time elapsed.
  • Strain, and discard chicken stock solid using a fine mesh strainer to remove smaller bits.
  • Cover and refrigerate. After the stock is congealed, remove fat.

Roasted Vegetable Stock

  • Get oven preheated to 450°F to prepare your ingredients
  • Put vegetables and garlic on baking sheet and drizzle with olive oil, toss to coat
  • Heat in oven for 25 minutes, turn and roast again for 15 minutes; tie thyme and chives together and bundled using butcher’s twine.
  • Put roasted vegetables and juices, scraping up and flavored pan browned bits into Cuisinart® Slow Cooker ceramic pot, add herbs, peppercorns and 6 cups of water and cover up the lid.
  • Switch ON the slow cooker put the time to 6 hours LOW; it will automatically shift to Warm after time elapsed.
  • Strain vegetables from stock and discard the solid, cover and put in the refrigerator until ready to use.
